    About First Bite Pop-Up

Introducing Galveston’s newest Monday brunch option: a delightful pop-up concept by visionary JM Medellin. Born out of a passion for delectable brunch fare, this vibrant venture aims to revolutionize the way Galvestonians indulge in their mid-morning cravings.

At the heart of this captivating experience are brunch boards, meticulously crafted to please the most discerning palates. The star of the show is undoubtedly the heavenly Liege waffle, with its golden, caramelized exterior and fluffy, melt-in-your-mouth interior. Each bite transports you to a realm of pure bliss, as the waffle’s rich aroma and perfectly balanced sweetness captivate your senses.

But that’s just the beginning—these brunch boards are a treasure trove of delights. Picture a medley of savory breakfast meats, cooked to perfection and expertly chosen to tantalize your taste buds. From succulent bacon to savory sausages, every bite is a journey into flavor paradise. Paired with the waffles, they create an irresistible harmony that will leave you craving more.

Of course, no brunch board is complete without a burst of refreshing fruit. Seasonal fruits to include juicy berries, and watermelon—each piece handpicked to add a vibrant touch to your meal. The juxtaposition of sweet and tangy flavors complements the richness of the waffles and the savory meats, resulting in a symphony of taste that dances on your palate.

JM Medellin envisioned this pop-up brunch concept as a way to provide Galveston with an easy brunch option that would captivate both locals and visitors alike. With a keen eye for detail and an unwavering commitment to culinary excellence, Medellin’s creation is an ode to the art of brunching. By bringing together classic favorites with creative twists, this brunch experience promises to be a catalyst for memorable moments and shared joy.

Step into the world of this pop-up brunch, where the aroma of freshly brewed coffee mingles with the chatter of delighted patrons.
