    We’ll have UTMB Physician Assistant Program’s “Healthy Living on a Budget” at GOFM!

    They’ll be doing screenings that include height, weight, blood pressure reading, glucometer reading, body mass index, and a few more stats. Their goal is to help the community have a better idea of how nutrition and exercise play a role in their health & offer simple modifications to help people take control of their health.

    This year, our annual Easter Egg hunt will be a little bit different.

    Kids of all ages can stop by the Society for Neuroscience Galveston booth to pick up a Market Treasure Hunt where you’ll search around market & solve fun questions & riddles.

    Bring the completed Hunt back to their booth to receive a sweet goodie bag featuring a tasty treat from Crescent City Connection and a DIY Coloring Brain Cap.

    There will be enough goodies for 50 kiddos, so come early!

  • Jook/Congee

    Jook/Congee

    There are many names for congee (at our home we called it jook). Nevertheless, this rice porridge is a staple in Asian countries.

    We would eat jook when we were sick, when it was cold, or when we needed something comforting, warm, and filling. It could be eaten for breakfast, lunch, or dinner – it all depended on what was served with it!

    Some of our favorite sides were salted egg, century egg, pork ribs, Chinese sausage, fried dough, scallions, shallots, white pepper, soy sauce, sesame oil… the list goes on. Pictured right, we topped with bacon, Grow4Health microgreens, fried egg, and soy sauce.

    Ingredients

    • 1/4 cup dried shrimp

    • 2 tablespoons dried scallops

    • 2 tablespoons oil

      2 tablespoons minced ginger

    • 3 cloves garlic, minced

    • 1/4 pound shiitake mushrooms, sliced into 1/4-inch thickness

    • 1 cup jasmine rice

    • 6 cups Jolly Farms chicken broth

    • 3 cups water

    • 1 teaspoon salt, add more to taste


    Instructions

    1. Rinse the dried shrimp and dried scallops with water. Then, place them in a bowl and soak with 2/3 cup of water for 30 minutes. The shrimp and scallops should have plumped up a little. You can drain the water once you’re done soaking or save it. I usually save the water and use it to cook the porridge.

    2. Rinse the rice once and drain the water.

    3. Heat the oil in a pot over medium-high heat. Add the minced ginger and garlic and cook for 30 seconds, until they start to become fragrant. Add the rehydrated shrimp and scallops to the pot. Use the tip of a wooden spoon or spatula to break the scallops apart. This does not need to be too precise. Add the mushrooms and rice, and sauté for another minute.

    4. Carefully pour the broth and water into the pot. Sprinkle in the salt and stir. Bring the broth to a boil, uncovered. Then, turn the heat to low and cover the pot. I usually transfer the pot to a smaller burner so the congee cooks at very low heat. Let the congee simmer for about an hour, stirring occasionally.

    5. After an hour, check the congee to see if the consistency is to your liking. I like to leave the pot uncovered for 15 minutes so that the porridge cools and thickens. If you notice a small film form on the top of the congee, just stir everything before serving. Taste the congee and add more salt if necessary.

    6. Serve the congee in bowls. Have sliced scallions, fried shallots, chili oil, and sliced fried dough sticks on the side for topping.

  • Sliced Pork Belly with Honey Garlic Sauce

    Sliced Pork Belly with Honey Garlic Sauce

    Ingredients

    • 1 lb Law Ranch pork belly

    • 1/4 cup BZ Honey honey

    • 3 tablespoons tamari sauce or soy sauce

    • 4 cloves garlic, minced

    • 2 tablespoons sesame seeds, toasted

    • 2 green onions, chopped

    • salt, to taste

    Directions:

    1. How to cook sliced pork belly

      1. Slice pork belly into small cube-like pieces. Slice off extra fat, if you wish.

      2. Add sliced pork belly to a large pan and start frying on high heat. Do not add cooking oil.  

      3. Constantly move pork belly slices in the beginning.  Cook them for about 5 minutes on one side on high heat, then 5 minutes on the other side on high-medium heat.   Use splatter screen.  The total cooking time should be about 10 minutes.   Reduce heat to medium, if the pan gets too hot. The sliced pork belly should get crispy and browned. 

      4. As you’re cooking you might have to reduce heat from high to medium as the pan gets hot. There shouldn’t be any burnt pieces and the pan should not get burned on the bottom (I used stainless steel pan). Don’t crowd the pan. Depending on the size of your frying pan, you might have to do this in 2 batches.

      5. Remove pan-fried pork belly slices to a plate.  Remove extra fat from the frying pan. 

      Honey Garlic Sauce

      1. Add 1/4 cup honey and 3 tablespoons tamari sauce, and minced garlic. 

      2. Heat up the sauce until it boils, reduce heat, and cook for about 1 minute stirring. Remove from heat. 

      3. Add 1 tablespoon of sesame seeds and stir it in.  Add back the sliced pork belly.  

      4. Sprinkle the remaining 1 tablespoon of sesame seeds on top.  Top with chopped green onion, and serve.

  • Collaborative Community Art Project with the Juneteenth Legacy Project

    Collaborative Community Art Project with the Juneteenth Legacy Project

    Be a part of the Juneteeth Legacy Project’s mural by joining Galveston’s Own Farmers Market on Sunday, March 21. The artist Reginald C. Adams will provide everyone an opportunity to physically contribute to the massive art installation and storytelling space, “Absolute Equality,” which will be completed and dedicated on the Juneteenth holiday, June 19, 2021.

    Reginald C. Adams is a world-renowned artist engaged in creating public art installations in historic and underserved communities across the United States. The 5,000 square foot mural will commemorate the emancipation of the final remaining enslaved African Americans in Texas.

    We will have spaced out art stations set up for folks to paint and color pieces of the mural. Each participant will have 15 minutes to complete their piece. Stations will be on a first-come, first-served basis.

    Masks & social distancing will be required. If it rains, this event will be rescheduled.
